Bay Scallops with Spaghetti and Vodka Sauce
1 lb scallops
1 cup chopped fresh mushrooms
¾ cup chopped Vidalia onion
1 jar of pre-made Vodka sauce (I use Classico)
1 box spaghetti
1 tbls chopped fresh basil (optional)
2 tbls grated fresh Parmesan cheese (optional)
Cook spaghetti according to package directions. Saute mushrooms, onion and scallops until done (do not overcook scallops). Add vodka sauce and heat thoroughly. Serve over pasta and top with fresh basil and Parmesan cheese
